In this week’s Casamara Club leisure diaries, founder Jason talks to head of production Erica about cooking to stay warm.
Erica! We're now halfway through the winter. Spring is six weeks away. But it's very cold here in Detroit ("feels like 1°"), and I'll take any excuse to turn on the stove:
- This recipe for Citrus-Glazed Pork Chops With Gingery Bok Choy from Yewande Komolafe was delicious. I added some diced veggies along with the shallots and garlic, and as long as it's citrus season I may start cooking everything in orange juice. Who's gonna stop me?
- I have to shout out Rachel Karten for sharing Yewande's recipe (and lots of other great food) on her Instagram. She also just launched a newsletter to share her expertise and past experience running Bon Appetit's social media.
- This recipe for Adobo Style Eggplant from Sohla El-Waylly was another killer, and maybe the tastiest dish I've made all winter. (I subbed lamb for pork, and assorted root veggies for eggplant, because that's what was handy.) Make a lot, enjoy for days.
- Finally, I can't bring up three former Bon Appetit employees without mentioning the magazine's reckoning with race and inequity last summer. I highly recommend the new podcast miniseries The Test Kitchen from Reply All, which is digging into not just what happened last summer but how we got there.
